First time with GM All Trump

I've been using KASL for the last 4 or 5 years. Switched to GM All Trump and was very happy with the results. Made 18" inch pies.
60% Hydration
.2% IDY
2.8% Kosher salt
21.63 oz. dough ball

Very Nice!! look  great fresh Mozz, sliced ball, or in water ? convection oven right ? Bromated I assume?
I also just recently got a 50 lb bag of All trumps and posted results under NY style.Hail ther all trump.  I found the results also quite pleasing! I have also used the King Authur Sir Lancelot and liked the results of that flour also its a toss up for me . However  I cant find it in bulk, so from KA is way overpriced $6.95 for 3 lbs + shipping ? that would make my 50lb sack of all trumps  Like $115.00 + shipping!! I paid $17  :P and I love the result

For those of you that are interested, we have the KASL , Caputo Pizzeria , and All trumps (as well as the other commercial King Arthur flours) in 5lb bags.  ;D

That pie looks great.   :chef:  I've been using KASL but folks have recommended trying All Trumps bromated.  I see what you're using isn't bromated, but did you find any significant differences between the All Trumps and the KASL you've been using?

Steelsieve--- I thought the dough had a better crust. Nice and crisp on the outside and great air pockets inside. The bottom also was better compared to KASL. The dough could have been stretched larger, but the oven door opening is 18.5"---Mel

Im the same way alot...If I can remember to take some photos,I put my pizzas on top of my old ugly elec oven and take snap shots...lucky I took enough but never cared to try and take better pics with a nice surrounding background.Just lazy I guess..Vito and others sure do take some nice pics tho!

I actually like that edge...I get sauce splatter on my crust rim alot and dont mind it.
