Finally signed the lease for my new pizzeria in Vancouver, BC. It's taken a long time to find a good location as our original location fell through. I'll start renovating this week. The pizza is going to be a neapolitan/ny hybrid so I wasn't sure which section to post in. It will be a 50 seat restaurant with 7 or 8 12" pizzas on the menu and I will be making all of my own cured meats as well as the fior di latte. I am hoping to open by June 15 but it's going to be a lot of work.
