The Big Guy! Precast Barrel oven

So this is the big brother of the Stone age oven I posted in the Rest. Depot 00 flour demo thread. (1st pic) This is like cooking in a walk in oven  :-D ! Huge 48 X 48 Floor!  2 prima 60s would fit in there. No insulation on top, Barrel shape dome  is sky high Door is the size of a garage and chimney is grossly undersized. The Pluses-
you have plenty of room for the fire heats up quick ( Dome) and good for bread? and the price is right at about 1800 complete.
supposed to be fired up 2 hrs earlier but when I got there it was just getting going so the hearth was at 600 dome 800+
Made a 75 %Caputo 25% KASL which I loved the feel of
Here is the oven before and after during you can see the majority of the smoke comes out the front and the chimney that causes this to happen

So I whipped up a pie that would just fit in the door  ;D , but I did not have a big enough peel !! Believe it or not this was one of those Lasurdo Dough balls I don't know what they put in to make it so strong but I know I could have gone bigger ran out of arm! Cool thing was i put it on my 14" peel cut a circle with the cutter and made a ultra thin WFO pizza it was awesome. almost as thin as my cutter! This was end of bake and I ran out of tomatoe's so last pizza shot is light on topping so even more crispy I loved it! almost cracker like with NY style dough. Just noticed Look at everyone grabbing at this style.

And the real big Guy Pies. these are all the 75-25 Managed a few nice ones but would have liked more bottom heat maybe 2.5-  3 min on these. I enjoyed the time felt almost leisurely ! You can see some of that golden brown from the Caputo and minimal leaparding because there is so much room to work. Hey  It works if you work it !  I preferred the little oven cranked up.  but these pies were very good and a really tasty change Kinda Caputo Nyish   I will be cooking in this monster again with proper heat up on May 14th so I will repost the results . sorry guys all hone camera these and above

That thing sure does smoke an awful lot out the front.  I think it need both a bigger and taller flue.

Yes its sucjh a big chamber It  requires at least 8" No real room for door control either so it can basically be only on or off? I use my door as a damper to control the fire here that impossible too?
Like you said with Matt as long as its hot enough sure it would work but would not be happy cleaning that stone weekly/

Well, cleaning the stone is a non-starter if it is fake stone, so there is a bigger issue than that.  I know nothing about them, but just offhand I would say poor design.

Yep Its fake  as  I mentioned I prefered the little guy oven to this big one for pizza. may worked out well  for a ny style (or indoor tennis :-D)  in there but I think a true sub 90 sec.  Neopolitan will be tough  to maintain. ?

With a 4" flue it's like trying to suck an orange through a straw.
