Couldn't resist making this since there was a bucket of strawberries in the fridge waiting to be experimented with.
I made the dough yesterday (using
this cracker crust recipe) then rolled it out about 3/16" thick (a little thicker than recommended by the recipe).
Then I made a mint chocolate ganache (using semi sweet chocolate, cream, and a few fresh peppermint leaves) that was a little thicker than chocolate syrup. Par baked for about 3 minutes, coated lightly with the ganache, topped with thinly sliced strawberries and drizzled a little more ganache on top.
Baked at 350 with the oven door cracked just until the chocolate started to bubble a little.
I think it turned out pretty good, and it tastes great.
