First bake in my new brick WFO!

Hello all, This site was instrumental in helping me decide that my home oven and ceramic grill just weren't up to the task, so I build a brick oven in my yard. Finished yesterday, except for water-proofing the exterior and cosmetic stuff! Today, 8 pies! The first few were shaky, but by the end I was making satisfactory pies. I'm very pleased for a first effort, but I'm far from what I consider perfection.

The crusts were made with a starter culture that I started last year. It is really vigorous. Only an overnight rise, very wet (68%), and 50% caputo, 50% KA Bread. I've never worked with caputo before because I don't think it is suited to a 500 kitchen oven. The dome was about 850 and floor 750 for these pies.

Wow - you hit the ground running!  The oven is a beauty, and those pizzas look great.  How big is the floor?  Nice photos of the build, fun to see.  Thanks for sharing!!

Hi again,

looking at your facebook pictures... amazing.  The way the bricks slowly start to angle in, is incredible, I have no clue how you knew how to guage the angle on each row, so that the brick would
be perfect at the top, I'm amazed how perfect is is.

In one of your images, you show some sort of insulation going on top of the dome, did you add a second layer of brick over that insulation ? I don't see any other images showing you covering it with
anything so wonder where the insulation is, in the finished oven.  Or was this insulation just draped over the oven when you were firing it for the first time ?

I'm a bit puzzled.

The pizza looks out of this world, second to none.

Thanks for the kind words, all.

The oven is 36" inside diameter, and has a hemispherical dome.

As someone noticed, the oven isn't finished yet. It is perfectly good for cooking, but the insulation is totally exposed to weather, so for the moment it is covered with a tarp. I still have to build a weatherproof enclosure.

Hi Perry,

I think the original poster has a little experience doing this, so don't feel badly.  I could never build something this good without help.  There is a lot of work
and thought that went into that, even with a design, it has to be precise to work ( in terms of all the bricks lining up perfectly )  I bet there are hundreds of hours in
that project.  I only wish I could build something like that.

I just thought perhaps you had started a thread.  if you do have pictures, I'm sure others would appreciate seeing them as I would.  Would give me inspiration, seeing something that
perhaps I could also make LOL.

Yes, forno bravo pompeii plans and particularly the forums were amazing. I have no masonry experience before this project, but I'm generally pretty handy. I used a tool, usually called the "indispensable tool" to help me align each brick perfectly (or almost). You can see it in some of my facebook pics, the blue rod in the middle.
