  I ordered a bag of KASL flour, will be in tomorrow thursday, since it will be 50lbs I am going to put it into plastic containers and put it in the cellar where it is cool & dry, don't have a freezer, how long can I expect it to stay good.

I keep bulk food items in, HDPE 2, 5 gallon food grade buckets that have good seals in the lids and have only been used once for food products. Mine had pickles in them originally.  Most sources recommend a year in the original unopened package, cut that in half for open packages. Although information varies a bit from source to source. If the buckets are air tight and kept in a cool dry place white flour will stay fairly fresh for 1 1/2 years or longer. I'm sure some of it is held in rail cars, silos and warehouses (in paper packaging) for much longer than that before its made into other products or sold to the end user.

A 25lb bag of flour fits nicely into a 5 gallon bucket.
