My stuffed pizza recipe

About a year ago, there was a blog on the King Arthur site with a recipe for "Chicago-style" pizza that resulted in a lot of discussion (http://www.kingarthurflour.com/blog/2010/01/16/heres-the-deep-dish-secrets-of-chicagos-favorite-pizza-revealed/), of which I was a part. LOTS of discussion about the presence of corn meal in the recipe.  Eventually, the KAF blogger (PJ Hamel) and I ended up corresponding, and I sent her my recipe for stuffed pizza.  My recipe was a conglomeration of my memories from growing up in Urbana (Papa Dels!), various recipes from the internet, and lots of posts on this site. Still, probably not totally authentic, and not based on the style of any particular restaurant, just my version of stuffed pizza.  Eventually, PJ did a blog based on the recipe.  I meant to post it here a while back to get the opinions of people here, but never got around to it.

So after a long hiatus from deep dish in our house (been playing with pizza on the Grill Done, a BGE clone), I had a day off today and I'm making a double batch.  Half is being par baked and frozen, to overnight to a friend who is ill, and the other half is for dinner for my family tonight (and tomorrow).

Here is my formula for the dough (modified slightly by KAF to fit their format):

Flour (100%):    703.07 g  |  24.8 oz | 1.55 lbs
Water (47%):    330.45 g  |  11.66 oz | 0.73 lbs
IDY (.8%):    5.62 g | 0.2 oz | 0.01 lbs | 1.87 tsp | 0.62 tbsp
Salt (0.75%):    5.27 g | 0.19 oz | 0.01 lbs | 1.1 tsp | 0.37 tbsp
Olive Oil (3%):    21.09 g | 0.74 oz | 0.05 lbs | 4.69 tsp | 1.56 tbsp
Corn Oil (15%):    105.46 g | 3.72 oz | 0.23 lbs | 7.74 tbsp | 0.48 cups
Butter (3%):    21.09 g | 0.74 oz | 0.05 lbs | 4.46 tsp | 1.49 tbsp
Semolina (20%):    140.61 g | 4.96 oz | 0.31 lbs | 13.47 tbsp | 0.84 cups
Total (189.55%):   1332.68 g | 47.01 oz | 2.94 lbs | TF = 0.1827
Single Inner Ball:   512.57 g | 18.08 oz | 1.13 lbs
Single Outer Ball:   153.77 g | 5.42 oz | 0.34 lbs

No update really.  Got some good reviews at KAF, and it is my go-to recipe that I thought I would share with y'all.  Let me know if you like it!  I know the cooked sauce is not totally authentic, but I like it!
