King Arthur has apparently come out with a "00 Italian flour" with 8.5% protein for anyone who might be interested.

That's been around for a while. I've never tried it. It's expensive as heck and very low protein.

Horrible stuff!!! Its pretty much unbleached Cake flour. At 9 bucks a Kilo its 3X as expensive as Caputo 00 Flour. Then KA needs to re-think this one. Its the only KA product I ever bought that I don't like and returned to the store. Made Crappy Pastas as well!
