I saw on Peter Reinharts PizzaQuest about the Sriracha Salt by Brad English.  This is the recipe for Sriracha salt and the story behind it.  http://www.fornobravo.com/pizzaquest/instructionals/59-written-recipes/402-sriracha-seasoned-salt.html

I decided to try and make the Sriracha Salt since it sounded so easy and since it said it would add a spicy taste, but in a more flavorful way.  I made the Sriracha Salt last evening.

I cut zucchini, yellow squash, tomatoes, crushed garlic, added some olive oil, fresh basil, fresh oregano, fresh parsley, fresh sweet onions and sprinkled some Sriracha salt over the top and stirred it in.  I decided to bake the slow way like Les’s sweet sauce is made. 

I think the Sriracha Salt gave the zucchini and yellow squash a great taste with the other herbs and the slow bake.

Maybe I will try the Spicy oil next on PizzaQuest.

Norma, Sadly it is becoming difficult to find Huy Fong Foods, Made in the USA "rooster sauce" here in Mexico. Huy Fong Foods now produces it's sauce in Mexico and it's not as good as the "American" version IMO. It's just not the same. Of course their very popular sauce is not the same as the Thai versions I've tried. And yes, it is a USA product created by a Chinese Vietnamese farmer while in Asia but produced in the USA when he came to the US. So  it goes, we have better Coca Cola but you have better Sriracha "Rooster" sauce. Go figure.

I didn’t even think about Mexico not selling the Sriracha “rooster sauce”, or Huy Fong Foods, Inc. now producing it’s own sauce in Mexico and not being as good as the American version.  I also didn’t know that the USA product was created by a Chinese Vietnamese farmer while in Asia, but produced in the USA when he came back to the US.  You know a lot more about Huy Fong Foods, Inc. than I know.   :)

What did you use the “rooster sauce” (or comparable product) on before?  I never used the “rooster sauce” on anything before the salt.  I was thinking about using it on a pizza, but wasn't sure how to use it.

I tried the Sriracha Salt on regular hamburg bbq this evening and thought it was good.  I usually use apple cider vinegar, sugar, catsup and Worcestershire sauce for my hamburg bbq, but was out of the Worcestershire sauce, so I replaced it with a little more of the Sriracha sauce and added a little A-1 steak sauce.  It turned out better than I thought it would.  The Sriracha sauce gave the hamburg bbq a nice bite.

I had it on ribs the other night. It was great. Bill suggested I try it on the sourdough onion rings from his book which I hope to try this weekend.

I love Siracha. I mix it with soy sauce, hoisin sauce, and chili oil and use it as a dipping sauce, put in it soup, etc.
