Different manufacturers sell frames with different sized strings and spacing between the springs. Not sure if what I have used was a confectionary guitar frame or specifically made for cheese. I will find out if someone is curious.

The pasta/cheese guitar is pretty badass. The smoother the top surface and the narrower the space between strings (to a reasonable point) the better (for fresh mootz). Warm (prob too warm for health code standard/s) cheese pushes through far more easily than cold.

 you are right,the finished mozz that is in my water bath cuts clean without any mushing.

  the closeness of the wire spreads with the tension on the curd.it comes out about 1/4 of an inch in width.

did 25 pounds of cooked curd today.the little french fry cutter worked great. the push grid is removable and has two plastic snaps on the back.this tends to come off i put tooth picks in the opening so it sits tight no more issues.this works realy great !! it cut a lot of time off of hand dicing.the first 18 pounds was made Thursday so it was cold it cut fine. the batch sitting on the cutting board was made fresh and cooled in a water bath.because it id soft and milky it cuts very easily. i think this inexpensive tool works wonderfully. pic included

used the french fry cut cheeses for a mobile event last night and it worked great.cheese did not weight down the dough.got good coverage.i got a better bake without my bottoms being a concern. a picture.

that candy guitar posted earlier is a strange design.  I've never seen ones with the crank handles and I'd be worried about it for candy use, sometimes you want to go slow, some times you need to go really fast through it, depends on what you're cutting.  There is a brand called CHITCOMP which are priced more reasonably and very nice.  A used one sold on ebay for less than 500 bucks a while back.

i doubt either one would work with low moisture mozz.  on my first attempt i used a thicker guage wire and it didn't work with fresh mozz.  that looks to be considerably higher gauge than either wire.  i don't think the cheese would push through.
