I am building a new restaurant in Costa Rica and I am looking for a gas hearth oven that reaches at least 800 degrees.
We are planning on using the oven for flatbreads (with a Neapolitan-style crust), fish and steaks as well as to bake some bread.
Unfortunately, we only have around 80 cm (wide) of space left on our line.
We've looked at Woodstone and Forno Bravo and tried to find other ovens that reaches 800 degrees, but can't find anything that small.
If anyone is aware of anything that could work, or has any kind of useful advice for what we're trying to do, please let me know.
