I'm close getting to the 2 minute mark with my pies.  Tomatoes, mozzarella, and basil

I'd like to branch out, but wonder what traditional toppings don't cook well in the short tie period and high heat?

Will a mushroom cook/reduce in the short time or will it come out pretty raw?

Any other topping words of wisdom?

I would not do raw sausage...

and I like to pre cook mushrooms, but like red onions raw, except when I don't :)

I use raw mushrooms and raw sausage every time I bake - 60 seconds. Mozzerella, raw mushrooms, black pepper, and pram w/ white truffle oil added post bake is one of my all time favorite pies.

There is a place for both raw and cooked mushrooms. The flavor is so different.

You just have to adjust the size of the sausage bits down a bit for Neo when cooking raw.  I normally pre-cook them, but just so I can add seasoning to them, plus I like fairly large chunks.  Mushrooms I slice thick and always use raw.

 :-D about dime size and they cook just fine with a 60sec bake provided the heat is in the 850f or so.  I prefer raw sausage baked on pizza because the grease that comes off stays on the pizza.  That's where all the flavor is.  If I occassionally precook it, I only partially pan fry it leaving the center raw.  They finish cooking on the pizza to avoid rendering too much fat out of the sausage.
