Grande expiration date

I love Grande for my NY pie, and get a 6 pound loaf at Maine Restaurant/Food supply in Scranton for about 20 bucks.  The date of production is usually about a month old, but this time around it was 2 months old.  I hesitated buying it, but another distributor Orlando in my area required the purchase of a case ( 50 pounds - forget it!)  I bought Grande, they marked it down from 3 to 2 a pound, and I will use it tonight.  As previously mentioned on this forum, and confirmed by a call to Grande, they recommend use within 6 weeks.  I am a bit puzzled by this because cheese frequently ages well.  Has anyone noticed a difference between one month old Grande, and say, perhaps 3 months old Grande in loaf form that has been properly refrigerated?  I will report if I notice any difference as I use this loaf over the next month.   Mark

That's a helluva good price on Grande, is it whole milk or part skimmed? I wouldn't be too corcerned with the date, just wrap it well between uses.

   It is whole milk, and yeah, I do get it at a good price at Maine.  I do wrap it carefully after each use - I put it in a plastic zip lock bag and suck all the air out - sort of like vacuum pack.  I usually lasts me a month without any problem.  Just cranked out 4 trays an hour ago.  My family nor I could tell it was 2 month old Grande.   Mark
