I love Grande for my NY pie, and get a 6 pound loaf at Maine Restaurant/Food supply in Scranton for about 20 bucks. The date of production is usually about a month old, but this time around it was 2 months old. I hesitated buying it, but another distributor Orlando in my area required the purchase of a case ( 50 pounds - forget it!) I bought Grande, they marked it down from 3 to 2 a pound, and I will use it tonight. As previously mentioned on this forum, and confirmed by a call to Grande, they recommend use within 6 weeks. I am a bit puzzled by this because cheese frequently ages well. Has anyone noticed a difference between one month old Grande, and say, perhaps 3 months old Grande in loaf form that has been properly refrigerated? I will report if I notice any difference as I use this loaf over the next month. Mark
