That looks very good. I also like my pizza relatively plain. Most of the time 1 topping, never more than 3 toppings.

I agree also I only use 2 to three toppings. The only single topping pizzas I make are pepp. and shroom.
I must say though that my favorite Chicago Style is LOADED.

My typical deep dish has pepperoni and beef sausage.  Every no and again for my wife I might add some Black Olives or mushrooms on her part.

One time for my brother I made a special:

pepperoni
sausage
ground beef
mushrooms
black olives
onions
green peppers

It looked kick @$$
