How long did you cooked the pizzas in the oven and which mark of oven are you using?

These pizze were made in strict accordance with the "disciplinaire" for Napoletana pizze STG.

Baked in a Woodstone (wood burning, no gas or infrared b.s.) for less than 90 seconds.

The oven could have been a little hotter, but I feel that these results were pretty good.
Someday I would like to try one of the real Neapolitan ovens but for now just woodstone....

Oh, these tasted just as good as they looked. :chef:

I have no doubts that the taste was really good :-)

Especially the filetti one looks like a very good neapolitan pizza as I saw in Naple this summer  ;)

the pizza looks really good.  do you mean you don't use any yeast for the dough?  just finished building my own refractory brick oven (except i used infrared burners instead of wood due to space constraint) tried my first batch with regular bread flour instead of caputo 00.  now i need to find the best dough recipe for my pizza

He uses wild yeast/sourdough instead of ADY or IDY.  ;)

thanks for the info - bryan s and shango.  made some pizza with my new oven this evening - pretty good except crust a little bit on the thick side in the middle.
