Hey Guys,

Guess it really helps to have a lot of "Jersey" and a little "Wiseguy" in ya to Really appreciate this Pie  >:D

I know it's not "Chris Bianco's" but I think I've come up with a "Passable" replica  :D

It never ceases to amaze me how something with so few  ingredients can absolutely blow your taste buds AWAY  ;D ;D

Here is "All" it is  ;)

Bread, Sweet Fennel Sausage, Oven Roasted Onions, Garlic, Basil, Oregano, Motz and a little Oil  :D :D

I Really can't Impress upon you just how absolutely Delicious this Stuff is, Give it a try, You can't go Wrong  ;D ;D

That looks awesome!  Where did you get Fenel Sausage?  I've had a hard time finding it.

You probably won't find anything in your grocery store labeled "Fennel" and, unless you have a real Italian grocery store in your area, you'll just have to try a few types available in your area and see which "Sweet" Italian sausage has the best (most fennel) taste that you like.

Fennel is really a taste as opposed to a "Name"

Use whatever Italian "Sweet" sausage you like best, it'll work great  :D Do not (in my opinion) use "Hot" as I think it really would kick against the oven roasted onions, rather than compliment them  ;)

Make the best dough you can and go for it  ;D

I haven't posted my latest dough recipe and prep on the forum yet  :(

I do think, however, that I probably won't be tinkering with much more as I am really happy with the results I've been getting  ;D

I will get it up on the forum soon under either this thread or a new thread under "NY Style"  ;)

Sorry it really is a chore to write up a process from beginning to end  :(

Anyway, thanks for the compliments, and keep watchin "NY Style"  :D

That is great information, I would have never guessed that they were the same thing!  Thank you!  I'll be sure to post photo's when I make my Wiseguy.

That does not sound odd to me.  It's just a fancy sausage and onion pie. <grin>  Then again, before moving to Seattle, I lived off GSP Exit 168, Hillsdale.

First off I've never been to Jersey or even north of Baltimore, so I cannot compare this to a sausage roll, but it looked like an interesting combination.

I tried this pie with a few changes, I added my base sauce which is a Papa John's clone (sweet), carmelized onions instead of oven roasted, and fresh roasted red peppers.  It turned out great, overall it was a wee bit too sweet for my tastes, as the onion, sauce and sausage all were sweet.  But overall I cannot wait to make it again.  Next time I will either omit the sauce all together (maybe as a side to dip) or go with a mild or hot italian sausage to add some contrast to the sweetness.

Anyway, thanks for the inspiration Jerry...great pie!

I made this back in the Fall and forgot to post, but here is a Wiseguy that I did... needs some work, but now that winter is here, I may cook the onion in my fireplace and then try again using real smoked mozz as well.

If so try it without the tomatoes, It's a "White" pie  :D

And YES, it is pretty "Sweet"

Yes, I screwed the pooch on this one, and didn't fully read/understand the recipe.  I read the ingredient list as just toppings, so I used my regular pizza sauce (tomatoes, garlic, oil, spices etc) which is a sweet sauce. 

I will definitely make it again, wife and kids loved it.

It tasted GREAT... BUT... it also gave me the worst heartburn... the particular sausage that I used was too strong on the stomach.
