Wood Oven recipe

Anybody got any thoughts on a pizza recipe for a wood fired oven.  i would think it would have less fat and sugar to prevent escess charing.

I don't know if this will help, but you may want to check it out: http://www.fogazzo.com/html/pizza_dough.html.  I had found the site some time ago and bookmarked it.  I haven't personally tried the recipes.

You might also want to take a look at a couple of postings by a fellow by the name of Bill Klapp, on Neapolitan pizzas baked in his wood fired oven in Italy, at http://forums.egullet.com/index.php?act=ST&f=39&t=26195&. The first post is all about his experience with the wood fired oven, and is a great read.  Below on the same page is his dough recipe for Neapolitan pizza.

Thanks Pete ,I will give it a read.   Still got to build the thing but I thought I would be ready when it is finished.
