Author Topic: What kind of pizza pan....  (Read 1428 times)

I'm sure this has been posted already, but I have a couple of 15" pizza pans with holes in them....  Is that okay to make a thin crust pizza in and is there something I need to know as far as why the outside is so nice and crisp and the center seems to be soggy....

Yes they are for thin crust, but in a standard oven I would put them on a stone.

As for the center being soggy sounds like too much sauce in the center or the sauce is too watery.

don't place too many toppings dead center either, like Onions... they give off a lot of moisture that collects there.
