Hey guys, was wondering if someone can please shed some light. I used to work for a pizza place and they had a pretty large sized oven that was 30+ years old and it worked magic. It was gas/fire fed, had a foot high door in the center with a wooden handle to open and close with a viewing window, had 6 metal (or iron or steel?) shelves that rotated vertically up and down in a complete circle (always keeping the pizza flat of course), and could fit about 5 large pizzas per shelf.

That thing was great, but everythin I have been looking at seems to be a stationary shelf.

That would be so cool if someone knew what I was talking about.

You're asking about a revolving tray oven. You could 'net searches on them.

There is currently a picture of one on the home page of "Independent Bakery Equipment Company." However, as a clearing house for used equipment, it may not stay there long. They also have a page dedicated to the type, called there, "oven  - Revolving".
As a new member I can't post hyperlinks, so try to figure it out.

Doing a bunch of searches around revolving tray oven, bakery oven, bakery equipment, commercial ovens, etc. will probably land several leads.

I think what you are looking for is made by Fish Co. They will be at the Pizza Expo in Las Vegas on April 1, 2, & 3.

I use to cook on one of thoes (Dino's in Whiting In.) back in the 70S.  They were great!

that is what i use ,mine was made by boling oven in avon lake ohio.
