"To cook or not to cook" that is the question about spinach

I am making a stuff crust pizza Xmas eve. I plan on using spinach, do i cook the spinach or do i put fresh in? When i used sausage with the recipe, I put the sausage in raw and it came out great. What do you guys think? Thanks rodeo

I think this topic came up before... Just wilt the spinach and drain it well.

I just made two pies last night. Not chicago but more NY/Thin/American. I used spinach on both. One I cooked the spinich in a fry pan for a few seconds, the other I put the spinach on the pie uncooked, under the cheese.
I think I like the uncooked better. It is a fragile leaf and seems to cook on it's own just fine when placed on the pie raw..

When I used spinach in my chicago style pizza I did not cook it. The long cook time for a chicago pizza seems to do the job just fine.

just not a fan of all the moisture released by the spinach if it's used raw..
