Would love to hear about people's experience of eating pizza in Naples Italy.

Have been to Naples Italy 3 Times.... All just to research pizza. There is mostly good pizza everywhere in Naples. There are a few average places, but for the most part everything is good, simply due to the freshest ingredients and high skill level. Pizza is an extremely important part of life in Naples. One of the very best pizzerie is called Da michele.. you can look and read about this place at damichele.net .... This place and others that make pizza in a similar fashion are among the best. Some of the most famous are Ciro a Santa Brigida (owned by the president of vera pizza organization), trianon da ciro (practically across the street from da michele), lombardi a santa chiara (I believe connected through history to the lombardi in new york city), pizzeria Brandi ( where the pizza margherita was invented), di matteo, sorbillo, Pizzeria Port A'lba (which is the oldest pizzeria in the world opening in 1830)..there are too many to list. i will post a follow up to this message around february 18th as I will be returning from 2 days in Rome and 5 days in Napoli. The purpose of this trip is to conclude 15 years of research on pizza napoletana. I will also have alot of photographs for anyone interested.

I had pizza twice while I was there. I forget the names of the places but both were very good.

One was a vera pizza organization.

I wanted to goto trianon, but didn't have time.

Love to hear about your research and see your pics.

How long do they let the dough rise?

ok... here are some picture from naples.. first is a pizza margherita from pizzeria da michele. one of the oldest and most famous pizzerie in napoli. The menu consists of five items. Margherita, Marinara, Fanta orange, Coca-Cola & birra Nastro Azzurro.

another shot of a margherita from da michele, note the difference between the two pizzas. The first picture was a pizza from the evening. This one is from lunch. The dough used at lunch had a longer fermentation. also, the night time pizza was baked in a hotter oven.

here is a margherita from a famous pizzeria in the vomero section of naples called pizzeria gorizia. it has been there since 1916. This place was one of the more beautiful and elegant pizzerie i have seen.

another margherita from pizzeria starita. also a very nice pizzeria. also the location where the sofia loren film "l'oro di napoli was filmed in I believe 1957.

here is a fried calzone from a place that does only that, calzone fritte in like 6-8 varieties. de figole was the name I believe .

here is the oven at pizzeria gorizia.... with the three differet ovens, you see basically cosmetic differences as the inside of the ovens are very similar.

here is an interior shot of pizzeria da michele... this is a very traditional neapolitan pizzeria.... simple.... the focus is on one thing... beautiful pizza. Note the patron saint of pizzamakers in the background. Sant' Antonio Abate.

a few more pizze from da michele to make everyone hungry. Also, you may have notice the excellent bottles of Coca-Cola... In Naples, the perfect compliment to pizza is either beer (nastro azzurro - the closest thing in america is Birra Peroni) or Soda.. specifically two type... Coca Cola, or Fanta Orange. To get a taste of these european style sodas (the way they used to be made here before they switched everything to cheap corn syrup) check out this web site for orange fanta and coca cola from holland made with real sugar...

Thanks for the tour of Naples. The pizza seems so simple and uncluttered compared to our American version.

I have promised to take my family there next year. Now I know what's in store for us. The power of the internet is amazing. 10 years ago sharing information this way was simply not possible.

i've also eaten at da michele. thanks so much for the pictures full of memories! the pizza is very good. it's very, very authentic. it's also almost completely different from the pizza in ny. i love them both.

pizza in florence can also be very, very good. wonderful.

i've got a 00 in the oven right now. wish me luck.
