I did a search on the site, and can't find any posts or threads for this topic, so here it is.

A friend of mine is nearly deathly allergic to cow's milk and goat's milk, but is not allergic to sheep's milk, and can eat cheese made exclusively from sheep's milk.

It's been years since he's had really good pizza. Ever since he found out about his allergy, he's been down in the dumps because he loves pizza. I'd love to give my buddy a treat and make him some pizza with a good sheep's milk cheese as a suprise.

Do any of you know of a sheep's milk cheese that has the melting consistency and flavor profile compatible with really good pizza?

I know Pecorino Romano is made from sheep's milk, but it doesn't exactly melt well. Manchego is as well, but it's also a little on the dry side when it 'melts'. Those are the only cheeses I've had personally that are made with sheep's milk.

I probably have a different allergy than your friend (mine's more of an intolerance than an actual allergy), but I also cannot eat cow's milk cheese (or any cow's milk fat for that matter), or goat's milk cheese. Sheep's milk is also fine for me.

However, in most countries outside the US, mozzarella is not made from cow's milk. It's made from buffalo milk. For me, even though I can't have anything with cow's milk fat, I have absolutely no problem with buffalo mozzarella. It's pretty easy to find buffalo mozzarella, and although it's more expensive than cow's milk mozzarella, it's worth it to have pizza!

I too am looking for a good melting sheep's milk cheese (or I guess buffalo milk would be fine too), more like gruyere, so if you have heard anything elsewhere, please let me know.
