i had left over lou HRI dough.  and loo mentioned at one point that the HRI dough was close to a deep dish dough(somewhere)anyhow my wife had a pan ...i think it is a 12 inch 2 inch side.  but i was way tooo saucy.  i wnet with a puree sauce instead if a chunkier base....i dont like chunks...but this was tooooooo saucy. i should have gone with a 6-1.  but..  leftovers were phenom!!   i used whole milk mozzz, and a scamorza mix.  bottom line just too much sauce.  but the crust was great.  crunched when cut. and a fork worked well with this pie.  i think the crust was really good.
