So this is a bit belated, but for Mothers Day a few weeks back, my ma requested homemade deep dish pizza.  So I prepared The Lou (spinach, sliced tomatoes & cheddar cheese--no mushrooms on this one) and also a meat lover combo of sausage & pepperoni.  Turned out pretty well--I wilted the spinach first with some minced garlic & let it cool before laying it on top of the mozzarella.  Then topped it with sliced tomatoes & cheddar & parm.  My one complaint was the crust was a bit soggier, which I think I can remedy by salting the tomato slices first & letting them drain a bit before adding them, but then again The Lou at Malnatis is a bit soggy.  Anyhow, here's a pic...
