How long can you store uncooked pizza sauce?  It seems I have a lot left over each time and im not sure how long it will keep in a air tight bowl in the Fridge

Mike, I buy large sauce cans that I empty into glass jars and in the fridge. I kept it once for 2 weeks and it was good til finished.

if you are just storing raw tomatoes or puree etc. it will last a LONG time....a month would not be unusual

if you are storing a "sauce" with spices such as oregano or garlic you are looking at only a week or maybe a little more if you don't mind a sauce that has lost its fresh flavor.

Thanks I was just wondering. its the pizza sauce with the spices. I have enough for at least 12 pizzas in a batch 16" and as much as I would love to eat pizza 24/7 this just not feasible.

I open a #10 can or two and store the product in a cambro container in the fridge. When its time to make pizza I only take out whats needed for the nights batch of pizza and make my sauce with that.   I never have to through anything away, and I always have a nice fresh tasting sauce for my pizza.

I sometimes have tomato puree for 3 weeks in the fridge with no problems. I use tightly covered glass.

Cambro has nice looking containers, but they are polycarbonate which is sometimes manufactured with bisphenol A (BPA), which is bad for your health. I called Cambro a few times trying to ascertain if their containers had BPA in them & couldn't get a clear answer from them.


edit: Cambro now has a statement on their webpage that says that their containers do contain BPA. I guess a lot of people have been asking. Of course, they spin it that BPA is all apple pie & honey i.e. iconically safe. <Sigh> If you'd like a more objective (non-PR, non-lobbyist) view of BPA safety, have a look here. A damn shame, because safety aside, they do make some nice containers.

I limit most things to a week. Not everything has a smell or molds when they go bad and best not to find out after you or your family eats it. Sauce freezes well in ziplock bags. I usually buy sauce in bulk and freeze in 2 cup batches in the ziplocks. Also, I've worked in critical care for almost 20 years and see the bad side of bad food all too often ESPECIALLY in kids. Not worth the few cents to push the envelope in my opinion.

I only use my sauce for one day and then freeze if any if left over. Since I do add spices this works for me. I use these microwavable deli containers.  I have frozen my sauce for up to two months with no effect in the taste.  This is a picture of the container and the site where I buy them.  Probably any restaurant store would have them.  They come in different sizes.

If you decide to freeze (which isn't a good idea generally as it can make the tomatoes runny -- freezing bursts the cell walls or something of the sort (ask Pete-zza)) I've had good luck freezing the tomatoes in ice cube trays and then storing the frozen cubes in ziplock bags.  This is a pure convenience measure, as depending on the size of the pizza I'm making I can take only the number of cubes I need (typically 2-4).
