Hello to my fellow pizza makers in So Cal. I'm located 20 mi. outside of San Diego, near El Cajon in the town of Lakeside. Most of my pies are made with sourdough starter and KA bread flour. Look forward to reading your various techniques/recipes for dough, sauce, etc...Doug

Hiya, I'm new here. I live in central CA, between Fresno and Bakersfield, just a few hours from So. CA. I'm having problems finding flour. I like KASL but I can't find any around here. Do any of you know of any sources I might try ? We have a Smart & Final here but I have not looked at the flour mentioned. Has anyone tried the Honeyville flour? We love pizza at our house!!

Im in San Diego, baking whatever sounds delicious out of my wood fired oven (that kind of restricts the playing field naturally). I have just started playing around with some sourdough's, hopefully I will have pictures soon. Good to see other people are in the area.

lulu, I have been able to get fairly good results out of all kinds of flour. Usually I use KA Bread Flour, but AP works fine. Try any grocery store that sells bulk, do you have a Henry's up there?

The Walmart in my area (Long Beach, Ca) sells Gold Medal Bread flour for $2.00 (5 pounds)....which is not a bad flour......that's the cheapest I've seen it anywhere.

I live in Fountain Valley right next to Huntington Beach. I have been on a quest to find some Hi-Gluten Un-bleached flour locally. The only flour I can find is the bleached La Romanella from Smart and Final and it works ok. I was able to purchase a 50lb bag of Giusto's Peek Performer flour and it works very well, unfortunately the source is in the bay area and shipping was more than the flour. Would anyone have a source they could pass on.

I was told by a reliable source to try Honeyville high gluten flour if I couldn't find king arthur sir lancelot. here is the info on Honeyville, they are online also and the shipping is cheap. I know alot of money but I have to say I love pizza so it was worth it to me and I'm not disappionted. I talked to one of the King arthur reps who told me they are just starting to make thier products more available here on the west coast so we should be able find them in the near furture, including sir lancelot. Lulu - Thanks for the tip. If you have a Restaurant Depot In your area you may be able to find Giusto's Peek Performer, if you do, give it a try.

Down in Mission Viejo! I'm a Bronx transplant who's trying to replicate the pies he grew up on - the NY street slice!
Notes: I really like the fire bricks I'm using in my oven (thread on NY Style) - giving great crispiness to the bottom.
Also, I just visited the Restaurant Depot in havanahead's neighborhood today for the first time! - Picked up a 50# bag of Pendleton Power flour and Stanislaus Tomato Magic. - I just prepped my sauce (seasoned with oregano, garlic powder, basil, salt, pepper) and my dough.
I'll post up pix when I cook up a couple of pies tomorrow night!
