When I stop burning the bottom of my pizzas Embarrassed when I get my temperatures correct, I will progress from supermarket mozzarella cheese to something better quality. I am on the Gold Coast Australia, a place where we watched deli after deli close down.

Other than the Brickworks market in Southport, any suggestions where I should be looking? Hopefully there are some Aussies out there who can help me.

you might want to try some of the local Italian suppliers, check them out online or in the yellow pages..
if they want sell to you in small orders, perhaps ask them where you could pick up their product..
maybe they sell to a store locally..
