Can anyone suggest a digital thermometer that I can use in my oven? I've seen some that go to 572 degrees F,  but i think mine might go higher...

How do you want to use it?  Probe and cable?  IR? 

I just popped open both links, but haven't looked yet. All I really want is something that I can shut into my oven and be able to see what temp it is at. Nothing fancy really. But I feel that I need more than 572, which I've found a few of. Only because even though I set the oven for 550, I'm cooking pies in 4 minutes, and that seems hotter than 550 to me... Maybe not... But I've done 63% hydration Lehmann NY pies and have had them cook between 4-6 minutes. My first one cooks fastest, it got a little burnt, top and bottom, at 4 minutes flat.

Edit: Just wanted to add, my oven is from the 50's. My wife has always noted that it cooks "hot" but by how much we don't know. I try to cook my pizzas at full blast, so whatever that is, I don't know. Sadly, I have no oven window, so it is guess and check.

You could get one of THESE GUYS and then pick the probe that meets your needs.  They have some for the ambient oven temp, as well as insertion probes.  Some of them can handle very high temps, just make sure to check the rating of the cable as well as the probe, or call them.  They can be a great help.
