 i am making a batch of caputo dough today would like to experiment with some oil in it . any thought on a starting % ?

I have never tried it personally but I would go with 1% max. You may want to reduce the floor temp a bit to 750-800 to compensate for the oil in the dough. Let us know how it works out.
