I am almost done with my last loaf of 8 Grande WM(gave at least half away}
I still have a Bag of Grande East Coast Diced at my other house thats frozen....
I think I should use it and see if there is any differance(forgot what it tasted like}
I hear the East coast blend has less oil on the chesse when done....
I will be buying Shredded instead of diced,,,,think shredded covers better when making a meatball or veal hero.....JT

JT,

I'm not sure if I'm following you correctly. Are the dice as big as dominoes or are they the size of what the pizza chain uses?

Mike,

JT is referring to the diced cheese that Domino's uses. Domino's uses a device that it invented (and is made only for Domino's but may occasionally be found on eBay) to distribute diced cheese onto its pizzas. You can see the device, which is called Autocheeser, at http://www.youtube.com/watch?v=UXSNpJ_rjI8. I believe that Leprino's is the supplier of the diced cheese to Domino's. The dice obviously has to be able to work with the Autocheeser.

Anyway, I asked because some of us here probably don't have a clue as to what size Domino's cuts its cheese. But I see what you're saying, Peter.

Btw, the "Autocheeser" reminds me a bit of the Apollo space capsules.  Smiley

The Grande Diced looks alot like the Dononos from a distance.....
Will buy the shredded for better coverage on meatball heros.............JT

This might sound stupid but is the east coast blend really 50/50 or does Grande hide the real ratio. If it is 50/50 can I just buy the WM and the PS and mix it myself using s 50/50 ratio and it is the same as the East Coast blend.

Depends where you buy yours from......
Most buy our Grande from food service companys by the case....
$60 - 80
Hummmm think $10 - $14 for a 5lb bag shredded  is kinda cheap

You in Jersey? 5 lbs about 11 bucks a bag but you gotta have cash and buy 6 bags
several local distubutors offer this pricing?
diced or shredded I prefer shredded nice coverage and more uses plowing though a few bads PCampbell gave me right know east coast all the way!

I was paying $60 a case of east coast blend shredded for the past year
($10 a 5lb bag or $2 a pound}
Went to my Local cash and carry food service about 2 weeks ago and paid around $80 for the case(Bova}
Even at $80 I think its still kinda of cheap
Yes I could have gone to a few places in NJ but I think the price should be around the same price.Even if I paid $10 extra for a case its still worth it,I am from the Poconos.
Geeeeeee Its been about 2 weeks and I have used up about a 5lb bag of shredded.
Made 3 or 4 small pizzas and a few meatball heros,Chesse kinda goes faster when you are useing shredded unless we are getting screwed on the weight with Grande lol.........JT

if anyone is interested you can do a search for the block cheese prices. it will give you a daily commodity price on cheese. most wholesalers will sell you cheese at a certain % over the block . it also gives you a good negotiating tool to haggle prices with.

Ok, if you did 4 small? pizzas and used a pound of cheese on each??? and a few meatball heros with a 1/2 pound on each you have used a lot of cheese. I love this stuff too but I get arpound 15  14" pies from a bag?
You might have to charge just a few bucks more to cover those quantities if you were in bus.. Norma  how much are you useing per pie grande or not?
I is great cheese but I do use others s well Boars Head block hand shred a fav.
