Hi all, I currently own and operate a bbq catering and vending business, and recently got a comstock castle pizza oven I'm installing in my catering truck.  We do allot of vending at high school sporting events and adding pizza to our menu should be a good idea.  Right now for the winter I have the oven temp. setup in my garage to play around with recipes and such.  My one distrubitor I use gave me a case of Rich's frozen dough balls to try out. I don't have the equipment to make much fresh dough.  I am gonna try it out and see how it goes, I've heard both good and bad about it.  I look forward to exploring this site and getting to know you folks, I'm really excited about being able to offer my customers pizza now,, got a few thoughts on speciatlty pizzas, such as a bbq chicken and ranch pizza, and a beef brisket pizza.  I hope to be around asking questions, and if possible answer some,, take care all.

Tinybudy, if you have some time, you might want to search through the forum for what Norma427 has done.  She came here with the idea of adding pizza to a marketplace stand and has made tremendously good progress.  She does make her own dough (not frozen), but some of the questions and answers involved with her starting up her addition of pizza to her food stand.  Most of the posts reside in the New York style category, but there are other threads posted in different areas that might also help you.

Welcome, and if I can help you in any way, let me know.  I am not an expert, like many people are in this forum and I am still learning, but I could tell you what I have learned so far.

Thanks Ernie and Norma,  the pizza for now anyhow will be just a small part of what we offer, with our BBQ being the main items.   However, I want to make the pizzas the best that I can.  I did just hook up with a  local grocery store that has a pizza shop in it, and make their own dough, worked out a deal to get my dough from them daily as I need it, and its really good.  My whole operation is out of an old salvation army canteen truck that I fixed up, along with my two mobile smokers.  Fairly small setup but very functional.  I'll try to post some pics later of my setup once I get the pizza oven installed in the truck.  Thanks again,,,, Josh

Sounds like you have a good plan starting out.  I have occasionally gotten dough balls from a local Whole Foods store and found them to be pretty good (they're fresh, not frozen), so sometimes that can certainly work to your advantage in terms of ingredients and time involved.
