I've read the few posts from the last year or so on this flour (I particularly enjoyed Shango's colloquy with Marco on the subject), but I'm wondering if any commercial operators have been using it regularly since Roma has been distributing it. As stated in a previous post, it runs about $30 a bag vs $50 for you-know-who. My instinct says you get what you pay for, but I don't know to what degree a virtual import monopoly (enjoyed by Caputo, in the commercial end at least) may skew the price picture...

As always, any input is appreciated.

Mo,  it was quite high for a while,  but has come back down.  last I paid was 32 cash and carry (no account) from accardi foods in medford mass.  I do want to try the roma,  as I prefer san felice to caputo,  and like work with everthing I can.  I am really close to getting my hands on a bag.  -marc

zaman, I'm in Ames, Iowa. I haven't bought any for some time, but $30/bag sounds like a great price. If you don't mind, please pm me with the details of your supplier. I have been working with Sysco and they have brought some in for me, but I haven't taken delivery yet. I'm also trying to line up some Guistos. I'd sure like to keep all my sources in the US, if possible...

Ah hah,  the sysco thing explains the price...  some stuff especially stuff they think is special, is overpriced.  I'd like to hear your thoughts if you get a hold of some guistos.  -marc

sysco, is out of line on a lot of specialty items . you may be able to let them know that the average street price is 30.00 dollars and they may bring the price in line. i will pm the importer who i believe does all of the us, if not he will get you to the right person. i know that antica pizza in LA has to buy by the pallet , so he displays it in his dinning area.

Giusto's would be from European Imports, a company that Sysco partners with for specialty/imports...of course, price is always the determinative factor.

Yea, I know Giusto's is a San Francisco company, right? Euro Imports is just the name of the company that Sysco works with...I'm waiting to hear back from my Sysco guy on this...

Did anyone else notice that Giustos website is gone,  and only the world pantry site remains? I find that pretty odd as there is hardly any info on the wp site,  which is just a online vendor for them.  www.giustos.com.  I wonder if they are having problems.  I hope not,  but thier domain is for sale.  -marc

edit;  my mistake on the website spelling.  I thought they used to have a seperate site for the mill,  thats what made me wonder.

What I've got is the euro imports sku on the following page. The sysco rep should be able to get the info for you based on this: http://www.eiltd.com/product-detail.php?category=Pastry&pn=20&idx=228

My guy came back with $66/bag for the Giusto's...

Marc- it's giustos.com (probably a typo), which is redirected to worldpantry. I'm not sure about the domain for sale, but the number is still answered by Guisto's employees. Maybe worldpantry is handling their online sales-it can be a headache.

Jeff,  thanks for the tip there.  I edited my post above.  I do think that they had their own separate site before,  but maybe not.  Mo,  last time I had talked to Reuben at Giusto's,  he gave me a price of 19 or 20 dollars for the non organic 00 per 50 pounds.  Shipping to to the northeast from them was about 60 more.  I really wanted to try it out in my oven,  but thats just too much unfortunately,  especially if I liked it.  sorry for the misinfo -marc

My Sysco rep is great for meats, veggies, and such. But when it comes to anything pizza related he is fairly useless due to the lack of any quality pizza operations in his territory, or for this entire region actually.

Roma foods has the molino iaquone packed for them with their label on it. About $32/bag. The piancone tomatoes are pretty good too.
