stretching Neapolitan dough

 how can you use a towel to practice stretching neo dough? i want to learn to stretch dough  during the winter months using a wet a towel to practice. any one have video of how a towel can be beneficial?

This video uses actual dough, but I would assume you could use a wet towel to practice it.
