The apprenticeship class today was very informative. As I have said before, I learn more by watching, than reading. The instructor taught us how to make fresh mozzarella in a little over a half hour. Of course we were all asking questions, so she could have made the fresh mozzarella in a half hour.
I really enjoyed the taste of the fresh mozzarella. The milk was raw and fresh from the cows this morning. One of the interesting things I learned is she used veal rennet to make the mozzarella. I had used vegetable rennet, before when I made the fresh mozzarella.
The instructor also gave us another cheese to taste and explained what other kinds of cheese she makes.
I am going to go back to more classes. Such a wealth of information in such a short time.
