Norma, I would love to know how they're making the cheese edge with vegan cheese (or if they're even doing so) - I have yet to find a vegan cheese that can withstand a full bake cycle on either DS or NY pies (it just breaks down into a liquid if in the oven more than a few minutes). 

So the vegan DS I'm making now are baked with no cheese for about 10 minutes and then I add cheese for a couple more minutes in the oven to melt which results in a more traditional Sicilian style with an edge of expose crust rather than a crispy-cheesy edge.

Your way of baking the vegan cheese sounds good to me.  ;)

I really don't know what casein-free vegan cheese Buddy's might be using, or if Buddy's has a special casein-free cheese made for them.  I am sure there are many photos of Buddy's Vegan & Gluten Free Pizza, but the first pizza in this link is Buddy's Vegan & Gluten Free Pizza.  The edges don't look caramelized to me.  http://thehungrydudes.com/celebrating-national-pizza-month-with-buddys-pizza/

Thanks for that vegan, gluten-free pic - looks like they cook the crust separately, then top with some vegan cheese and other stuff and pop it back in the oven to finish off.  That was my game plan for the next time I make a gluten-free DS.  I'm not sure why they specify "casein-free" for the vegan cheese, though - it has to be casein-free.  ;)

It looks like the same thing to me that Buddy's probably bakes the crust separately, but I sure don't know.  I am really not familiar with vegan cheeses, except I guess they are made from soy.  I did see some pizzas on the forum that used vegan cheeses.  That is how much I know about vegan cheeses.   :-D

Will be interested in your next bake.  When I find time I will look for other photos of Buddy's gluten free and vegan pizzas.

This is a photo of another one from Buddy's facebook page.  It looks thinner to me than Buddy's regular pizzas.

Thanks for the additional picture.  The gluten-free crust is definitely thinner and it does look like they partially cook the crust, then dress it, and return to the oven, probably on a sheet pan, not in a DS pan.
