Taco Pizza with my American style dough

It's been a while since I posted on here but I made a great taco pizza last night.

Dough recipe. This makes 2 dough balls that are 16.5 ounces.

20 ounces king Arthur bread Flour
12 Ounces Cold spring water
1.5 tsp kosher salt
1 TBS Raw white Honey.
1.5 tsp IDY yeast

Combine dry ingredients in mixer with dough hook installed. Then add the spring water.

Mix 5 minutes
Rest 5 minutes
Mix 5 minutes

Ferment for 2 days. Then bring to room temperature before pressing out into pan. Be gentle with the dough to preserve the air bubbles! Bake at 550F.

Top with your favorite taco meat recipe and cheese. Then add on the salsa, lettuce, tomatoes, and sour cream!

I know what you are talking about. A long time ago I developed my own Mexican style pizza recipe with an herb and spice blend that I would describe as a cross between a taco blend and a Cincinnati Greek chili blend. I haven't made it in a long time, but now that you have posted to remind me I will have to resurrect my recipe and give it a try again. I think nice complements--which should apply in your case also--are typical Mexican ingredients like sour cream, guacamole, lettuce, tomatoes, crushed corn chips, etc.

Peter, your topping suggestions sound great. My Spice recipe is a bit different.

2/3rd cups oatmeal
2 tsp Chili Powder
1/2 tsp Cumin
1 tsp dried minced onions
1/2 tsp crushed red pepper

Place these ingredients in a blender and pulse a few times to mix everything up.

Brown 2 Lbs of ground beef then drain. Add 1 tsp of minced garlic, 2 tsp vinegar, 2 TBS of butter, and the seasonings. Salt and pepper to taste.

Adam,

Of all the threads on the forum, one of the most popular from the standpoint of being printed out is for a taco-style pizza that is called Fiestada. You can see what goes into that pizza at http://www.schwansfoodservice.com/Products/ProductDetail.cfm?ProductID=62050&CategoryID=6061. So, someone likes that style of pizza.

I've been thinking about making something similar to this idea with my own salsa, taco seasoned beef, and some Chihuahua cheese. Still haven't gotten to it yet, but I'm going to one of these days.
