Can some one explain how to make Cracker crust in a Wood Fired Oven Without using a pan?
I would like to know the recipe that works best and how they get it off the Peel

but I used the pan briefly very delicious with the flavor of the wood addded to this great crispy crust! cooks FAST! PLan to try again soon warm weather here maybe add some % of caputo 00 to the cracker just to experiment and learn how it reacts with this recipe. also will try with no pan but its so thin and low hydration, I dont know if it can take the heat without burning up, maybe like before wait a bit til hearth cools off to like 600 ish? heck I may even fire this weekend it gona be nice in Jersey!!
