The Hawaiian problem:

1.  Canned pineapple is a cheap product and it tastes like that in cooking.  Yuck.

2.  Fresh, juicy pineapple is from the gods but baked on a pizza it releases excessive water and you'll have a swampy mess in the center of the pie.

The solution:

Bake your pizza with a high-quality black forest ham, cut thinly.  Separately, take FRESH pineapple rounds cut as thinly as possible, brush on honey and place on the BBQ.

Once the pizza is done, place your BBQd fresh-honey-pineapple on the pizza so that each slice has one.  The grill marks look wild!

Winner.

I'll add to that:  a drizzle of hot chili oil brings out the flavor in both the ham and seared pineapple.

I read through the thread, and was grossing out over the ricotta - it would be mush on this. Use a buttery cheese like Havarti to accent the brick mozz.
I'd rather eat one good meal a day than 3 squares of garbage.

Here's "Mahalo" our 18" Hawaiian pizza that will be on our menu.  It features Black Forest Ham and FRESH BBQd pineapple with a honey glaze.  Bake time 4:20.

Thank you for the kind words!  We made a couple of "Mahalo" pizzas yesterday.  Taste testers scored the pizzas shown the highest of any made so far.  All were unaminous in saying that it was the best "Hawaiian" they'd ever tried and a couple commented that it was the best pizza they'd ever eaten of any variety during their lives.  Another simply rolled his eyes after taking a first bite and quietly said, "That tastes like money."  It's great when once-in-a-blue-moon a plan comes together and you get lucky.

Wow!  We're moving in the right direction, again.

I've never personally been a huge fan of pineapple/ham pizzas but I did like this creation.  I didn't get a chance to sample a slice live but I tried a re-heated slice in my kitchen oven this morning.  The sweet but tart pinapple plays off very nicely with the saltiness of the ham.  The tomato sauce corrals all the favors together and marries them on the palate.  Texture wise the soft, gooey cheese, and crunchy crisp crust, makes for a nice medley with the tender ham and fibrous pineapple.  Very balanced all around yet there are a number of tastes and textures happening at once which puts it over the top.  This menu item should be a solid seller by the slice, too.  I suspect Californian's will probably appreciate this pizza over our East Coast guests.

That looks delicious!  Your pineapple prep looks amazing - I will definitely visit when you open.  I'm about 2.5 hours from you, but my parents live in Guerneville so I visit there occasionally and Santa Rosa is on the way. 

Your attention to detail is impressive.

It almost looks like you combined two different pictures of pizza together. That's a clean divide on the toppings for sure, I'm always in a rush to not have my skin stick to the peel and always get some toppings on the wrong side. :-D
More is better..... and too much is just right.

That photo does look spliced, LOL.  It's not.  I've worked in aviation most of my life, designing and building airplanes (both flying models and full size real aircraft).  Doing things in a straight line by eye simply is an unconscious skill developed out of habit.  However, the formalized procedures required for consistency, quality and safety, translate very well into making pizza.

The problem with Hawaiian pizza is NOT ham and pineapple - they are great ingredients for a pizza. I had a Hawaiian pizza revelation when I deleted the damn tomato sauce.

Use a white sauce, a sweet BBQ sauce or just olive oil and you will end up with a simply amazing pizza.

You won't believe how incredible this pizza can be.

No self-respecting Hawaiian would have ham or, god forbid, Canadian bacon, on their Hawaiian pizza when they could have REAL Spam!  The sauce should be either a mild teriyaki or better yet, plum sauce.  :-D

Ha-ha. All these people messing with such a delicious pizza. Using fresh ham and fresh picked pineapple is unbeatable. Best pizza I've ever eaten, in fact.

I know I'm Latino but common, how does no one else fall deeply in love with Hawaiian pies?
