The first one will be 3 days the second perhaps 5 days, and I generally get about 500+- with my oven.

I can't wait to give this a try.   After these next two DD pies that are cold rising I'm going to concentrate on NY/Neo and try to build my skills and I've decided this is where I'm going to start.  Your threads are motivating.   My kingdom for just a quarter of your tomato-pie skills.   ;D

 Thanks, Chau. I'm planning making a pizza on Sunday. I'll take a couple of pictures and post. By the way, I have used your dough for pirozhki (these are small, meat-filled Russian pies fried on a fryng pan) and they tasted amazing - the dough was crispy outside and tender inside. Can I ask you a question? Is pizza making something you do for fun or it's your profession? I've seen pictures of pizzas you have made and they look real deal - probably very close to pies I have tried in Naples. People on this forum amaze me with the results they achieve. I can name you, Craig, Pizzanapoletana as well as many others whose pizzas look so beautiful that I could just keep looking at them for hours, like at some genius painting )

Jbravo, thank you for the kind words.  To answer your question, pizza making is strictly a hobby for me.  Some day, maybe when I'm semi retired or if the opportunity is right, then I may consider having a small pizzeria.

You know if you keep hanging around here and practicing, you too will be making pies like the ones you see on the forum.  When I first came here a few years ago, I had the same reaction when I looked at Jeff Varasanos pies and a few other members.  These days, the quality of the crumb and topping combinations are more important to me than the way the pizza looks, but that is also important to an extent.

You know when I was in college, I did have a GF who's family is from the Ukraine.  Her grandmother would make us home made perogies.   I have not had them in many years and miss them.  I would also love to see pictures of your pirhozkis along with your pizzas.  

Member, Norma makes many things with pizza dough and I wonder if she has tried making perogies with her pizza dough.

There's few better food delicacies on this planet than pierogies made by a Ukranian grandmother. Just about any hand made dumpling kicks serious behind (pan fried pork dumplings rule), but a well made pierogi seems to slightly surpass dumplings from other cultures.

Frank from Vesta used to sell pierogies from a truck. I noticed, on our last trip to Vesta, he has a shelf with special tools for cutting pierogi skins.

 Chau, if some day my pizzas look at least like a shadow of some pizzas that i see on this forum, I'll be a happy man :) I will surely post pics of my pirozhki (BTW thiese are same as "pirogi" but "-zhki" refers to smaller size - eg. "pizza" vs "pizzetta"). Another thing that I make using a pizza dough are Georgian (the country Georgia) cheese-filled pastry called "Khachapuri". There are several variations of them. Really delicious. To-die-for delicious! Traditionally they are made in a wood fired oven, so you could perhaps try making one in your WFO some day! Nice taliking to you.

Nope, perogies are one thing I didn't try, but I do like perogies.  Good perogies are made in the coal region near me.  :-D ;D
