HomeNYC, the company that did the remodeling/build-in at Paulie Gee's, just put up pics of Paulie's place in their on-line portfolio.

The company specializes in using reclaimed materials and the pictures look off the hook. Kind of a western saloon meets ski lodge meets barn. Very cool:

The St Joe's special on Friday night (in honor of Sant Joseph's day) was very interesting. Fior-di-latte, fresh chopped garlic, fresh sardines, raisins, fennel and breadcrumbs on top. Nice combination of flavors.

Wanted to visit with friends just to eat pizza the first time and hang out. Next time, which will be soon, I'll have the Flip on hand to get lotza video of the whole joint, oven and Paulie making pies. --K

For those who may not get to try the special (I missed it) that flavor combo is based on a classic Sicilian dish, pasta con sarde. It is traditionally served on St Joeseph's day. I hated it as a kid but have come to, well, accept it but 'like it' is probably too strong.

However, if you do like it, the dish can invoke a great deal of passion (at least it does in my family). Don't get in the way of a person  who love the flavors and their dish of pasta con sarde. You are likely to loose a body part ;).

My favorite, we make it on Christmas eve as well as Good Friday.

Good call. That's what Paulie said inspired him to make that pie.

I see you and Matt have experience with Pasta con sarde being prepared in the family. That's excellent. My mother, being Northern Italian, didn't have that Sicilian dish in her quiver of recipes. Looks like I missed out  :)

Forgot to mention it was fun to see that Brooks "Pizzacommander" Jones (http://pizzacommander.blogspot.com/) is now working at Paulie Gee's and helping with the pizza making. Paulie's son Derek "Del Boy" is taking on the roll of the fornaio and Michael was in town for a spell handling adding the ingredients that go on post bake (arugula, shaved pecorino, etc).

Because I was visiting friends and arrived later than I expected in NYC due to traffic, I had much less time than I had alloted to visit Paulie. For this reason, I decided to just eat and talk a bit without taking video and pics, etc.

I'll be back soon to get video footage, pics and ask Paulie and Brooks some questions about mixing, fermentation times and all that kinda stuff. --K

At Cane Rosso in Dallas - we have named a pizza after Paulie Gee, and it is quickly becoming one of our most popular.  Paulie was the one who convinced me to give up pepperoni, so we named a pizza after him.  He sent me a pic last night - he was wearing a Cane Rosso hat making pies!  The Paulie Gee has hot soppresata, carmelized onions, calabrian chiles, fior di latte, and san marzanos.  Read this funny review on Yelp:
