Here is a little video I made. It was more of an exercise to test some new video stuff, but it does show exactly how I make sauce:

Very informative video.   :)  I enjoyed hearing how to make great tomato sauce.  Your finished pie looked delicious, also!

Good video, but I accidentally got a good laugh out of it.  I tried the CC Beta because I was in a room with other people watching TV.  The subtitles were really off and sometimes amusing.  You should give it a try.

I watched the video before but then I tried it with the CC and I couldn't stop laughing at what it was saying. My immaturity kicked in again at the beginning when you are listing the 7 important things.

I've started filming the blockbuster sequel: "How I make Sauce Using Fresh Tomatoes" which I hope to have up on YouTube next week.

I've got 11 different varieties of tomatoes growing in the garden this year. And of these, one plant, the smallest, runtiest, saddest looking one, is pumping out the biggest, most beautiful fruit.

I'm doing the voice-over today so it should be up on YouTube soon. Sorry, I won't be on camera this time - Pitt's lawyers forced me to take down a recent video in which I appeared, claiming I was illegally appropriating his image. So you'll have to wait until the lawyers sort it all out. My face is my curse!

Plans for a boffo ending showing me bake a pizza topped with this sauce and garlicky shrimp fell through. Next time. Still tons of tomatoes ripening in the garden.

I also just discoverd the Carmelina tomatoes and really love them too! Posted that find somewhere?  from the opening of the can the bright red color and not extras makes for a geat sauce,.

I enjoyed your video clip. Your clip is very informative and I learned from it. Although this is an older posting, I wanted to ask if there is a Brand of SM tomatoes that you do not have to add sugar or wine vinegar to it. Many of the pizzerias that make a Margherita pizza, in my area, only add salt to their blended or crushed SM tomatoes. Any thoughts on a particular brand that is sweet enough or is sugar and vinegar a must?  Thanks again for a great video that your willing to share with the pizza making forum.

Not a must, but I find I need to add a pinch of sugar and a splash of vinegar to every batch of sauce I make using canned Carmelina tomatoes - just they way I happen to like it.

I don't think so, Tom. The purpose of the vinegar is to add a bit of acidity if needed - just enough to contrast a bit with the cheese and crust.

Hi Bill,

I tried your pizza sauce recipe tonight. I followed your video as I used a can of CENTO SM tomatoes. However, instead of crushing them by hand, I used my blender on low and just pressed the power button for a few seconds, each time I added an ingredient.  I did follow your advice and removed some of the seeds and the water from the tomatoes by hand. Overall, I liked the sauce. I will switch back and forth between just SM tomatoes and salt and your recipe. I like pizza sauce from SM tomatoes,  both ways.  I now, understand your point about the red wine vinegar. Having made the recipe, it makes very good sense to do it this way. It does make a difference in the taste.

Tonight, I made a cheese pizza so that I could really taste the flavor of the sauce without any other toppings. Again, it was very good. Thanks again for the work you put into the video.
