So I tried greasing the pan with shortening as I was having kind of a tough time de-panning the pizza with olive oil. Now the pizzas are coming out even softer and underbaked. Would the shortening prevent the outside from crisping up as much?

I use peanut oil for all of my sicilians. It has a high smoke point & mild flavor. All of my pizza comes out nicely browned and crispy on the bottom.
