The first DoughMate(r) Artisan Dough Trays and lids are here and being tested by yours truly.
I made a batch of no knead dough (ala Jim Leahy's Co and Sullivan St. Bakery  NYC) last night using half Caputo 00 flour and half King Arthur Bread Flour, very little yeast and super high hydration.
This morning after the first fermentation on my counter overnight I formed the 8 oz balls and placed them in the new trays and put them in the fridge....tomorrow night is Pizza Night!!  :D   Stay tuned...
Check out the perfect fit of two trays and one lid in our home fridge!!....

Good news!!  The Artisan Dough Tray passed all the tests!!   We decided to bake the pies inside as it has been so hot here in NJ we did not want to fire up the wood burning oven.  We baked them at at about  550 degrees.  I normally like a good char on the floor and edges but I believe because I used Caputo flour I could not get the char...not enough heat.
The pies were great anyway!  We made...pizza bianco, margherita, marinara, clam/garlic/onion, sausage/onion and shitake mushroom/onion.  Attached is a photo of some of the pies...

Not something I would use for pizza dough since I prefer the flexibility of individual containers for each dough ball, but the size seems perfect for home sausage making where I need a container big enough to mix up the meat and seasonings and keep them chilled in the fridge. Does the lid seal tight enough to prevent smells (garlic!!!) from escaping?

Definitely going to order one or two. Please post when they can be ordered.

Are the artisan boxes for sale yet?! I see them and a price listed on your website, but when I click to purchase it takes me to a list of products of which the Artisan is not listed.

SWEET! mine shipped friday,  first ones to the public from what they said.  I am excited to get these and no longer need to use a tupperware or glass type of container.  No more assaulting my 00 doughs to get them coaxed out of bowls.  Everytime I use my wooden boxes my pizzas are so much more round,  so I expect the same or better out of these.  Thanks for deciding to do these Mike!  -marc

I was working on freight rates to the UK however they were so high, it went to the "back burner".  Now with the dollar so weak it may make sense to ship to the UK.

Very suprised I missed this been using a teflon cookie tray for 6 260 G balls hard to cover and cant stack send me 2 right away please !!

Pulled the trigger tonight and order a few of these artisan dough trays. I  do a lot of parties and need the room and proper sealed storage. I have 2 close to this take and bake pan  than are covered and sealed (Take and Bake) but they were $22.95 ea. + tax!! so I can now do 24 dough balls comfortably. Not sure what everybody else will eat ?? :-D

John,  I think you will love them.  If you will be using them like I do,  have them ship you an extra lid.   Otherwise the flexiblility they offer is compromised.  Its well worth the 7.50,  and if you catch it before they ship it'll cost less.  -marc
