 this gentlemen did a demo at the caputo cup last month. he was with polly o but must of jumped ship. I asked him about salting the curd before cooking it and he felt it toughened it. his recommendation was to soak the cheese in a brine solution after it cooled in the cold water bath. one pound of salt to one gallon of water. soak then wrap individually in saran to keep the salt on the cheese. I think he said 45 minutes or longer, not sure.
