High Gluten Flour - Help!?
« on: July 10, 2010, 04:48:05 PM »
I can't find High Gluten Flour and have some recipies that call for it specifically.  I have bread flour and I did find  gluten flour.  Does anyone know if I can mix some gluten into the bread flour to make it high gluten flour?  If so, what would ratio be?  Thanks!

Yes you can definitely mix VWG (Vital Wheat Gluten) in your regular flour to increase the protein level.
You can use the following calculator:

King Arthur's Sir Lancelot and General Mills' All Trumps are high gluten flours. Check with a local restaurant food supplier or distributor, you may be able to purchase them wholesale. Usually they are packaged in 50# sacks.

Yep, I use gluten all the time here. Mexican flours are very low in gluten.
