Hello all i am having some major problems with my pizza. When i roll out the dough it springs back all the time, it wont stay to the size i want. Also when you cook the pizza and you take it out of the oven the crust is not light it is very heavy. Here is my dough resipe

 1 cup luke warm water
1 tsp. sugar
1 tsp. yeast

Combine let sit 10 minutes.

Combine following into yeast mixture

2 to 2 3/4 cups flour
1 tbsp olive oil
1 tsp salt

Let rest

Hello and welcome to our community  :D

how long do you let it rest ?

I'll tell you a little secret.

Make your dough, and put it into a Tupperware container or any other container, even a bowl with plastic wrap on it.

Pop it in the fridge and use it the next day.  You will have a much better time at rolling it out.  You'll also notice that the dough tastes
better, the flavours are more rounded out too.

Pizza places where I live ( in Canada ) never never ever use pizza dough that was made that day, dough is always a day old,
and the dough is MUCH better that way.  So today is Tuesday, we made dough today, that we use tomorrow.  Tomorrow we will make
dough that we will use on Thursday. That's how it goes.

If you really want to use the dough the same day, make it a few hours before you wish to use it, and make sure you put it into the fridge....
this relaxes the dough, and you will have a much better time at rolling it out, and not having it shrink back on you.

There will be others that give you great ideas on how to get it right.  Don't worry, with time you'll get it right.  ;D
