What's up for the weekend ? !

Hi Guys !

Wow, not one post for 5 days, that's not good hehehe  ;D

Anyway as I like to do on the BBQ forums, I'll ask everyone what's up for the
weekend in terms of pizza ?

anyone making anything ?

I'm making a dough tonight for a pizza tomorrow with some pastry flour I bought
will take pics for sure.

I'll edit this message later and add in an image of the flour I bought.

Working on my NY style this weekend. Making up two doughs tonight... one with high-gluten flour, the other with Italian "00" flour. Eating pizza tomorrow night!

Doing a Smoked Provelone, thin crust with pepperoni, sausage, mushrooms(fresh), onions and green peppers.

Made one using the California Pizza Kitchen dough recipe, with fresh mozzarella from the farmer's market in Union Square Park. Best pizza cheese I've tried yet!

Sure. It comes from a cookbook they published, though this website reprinted the dough recipe:

(obviously I'm too cheap to buy the book)

I used raw sugar instead of regular sugar, regular olive oil instead of extra virgin, and bread flour. I kneaded by hand for 10 - 15 mins (which is difficult since they use a wet dough... I added the last 1/4 cup water in after kneading for awhile. Also I used all the dough for one pizza; when I made the two 9-inch pizzas like they suggested the crust was so thin in the middle it didn't rise at all. The dough is very easy to handle.

CALIFORNIA PIZZA KITCHEN BASIC PIZZA DOUGH

Makes dough for two 9-inch pizzas

1 teaspoon yeast
1/2 cup plus 1 tablespoon warm water (105 to 110 degrees F)
1 1/2 cups bread flour or all-purpose flour
2 teaspoons granulated sugar
1 teaspoon salt
1 tablespoon extra virgin olive oil plus 1 tablespoon for coating

Dissolve yeast in water for 5 - 10 minutes, then add with 1 tablespoon of oil to the dry ingredients. Mix then knead for 5 minutes, let rise for 1.5 - 2 hours in a warm place, covered airtight. Punch down, place ball of dough covered airtight in the refrigerator overnight. Then divide dough in two (if you want), roll into balls on a smooth surface, making sure there are no openings in the ball. Rise at room temperature for 2 hours. Pat down by hand until 1/2 in. thick, then stretch out (do not roll). Top and bake on a pizza stone.

It says if you knead by hand to lightly oil your hands so the dough is easier to handle, but this didn't work out for me. Better directions are on the website or the book =) The book also says how to make all their different pizzas.
