Is there a cheese/dough percentage to help us estimate the quantity of cheese we should top the pizza with?
I use red cheddar cheese. I usually make 2 40in round pizzas, using the following:
1kg AP flour
3t instant yeast
2 1/4c water
We like the margarita, with just fresh tomato sauce and cheese. It turns out thick and fluffy, the way we like it.
I noticed that more cheese gives it a better taste. So, I wonder what is the perfect amount of cheese?
