How to get that distinct pizza smell/flavor of real pizzerias
« on: August 17, 2010, 01:39:01 AM »
Alot of the pizzerias around where I live(the good ones) all have that distinct pizza smell to them. You guys know the one i'm talking about, right? And i've been making pies religiously for over a year now, and that's the one thing my pizza seems to lack. It leaves my pies missing something. Is it in the dough? Because, I don't think it's in the cheese. My favorite pizza place around here has the whole pie taste and smell like it. It's really really good. Does anyone know what that is? It's the one thing that keeps my pies down, I think.
Thanks peeps, any help would be appreciated. :pizza:

That pizza smell you are talking about comes with time.  It comes from baking several hundred pies a day everyday. If you do that then your kitchen/house will smell like a awesome and "real" pizzeria.

I believe King Arthur also sells a pizza flavor dough seasoning you can add to your dough to get that unique aroma. http://www.kingarthurflour.com/shop/items/pizza-dough-flavor-4-oz

Or you could try a pizza scented car air freshener...  ;)
I love pigs. They convert vegetables into bacon.

Thank you for the replies. I'll definitely have to try that. Is it good? Has anybody tried that stuff before?

Try stepping out of the house after you've just eaten, taking in the fresh air (Depending on where you live) then step back in,  wham, you might just have what you're looking for.

Thanks for the additional replies everybody. I ordered some of that seasoning from KA. It
doesn't look like it's very popular, from a little googing. But lets see what it does!!!

Most of the restaurants I have worked in smelled distinctly different (and better) out front than they do in the kitchen.  All I want to smell is the pie I am cooking.

I get it from heating up the stone.  That sucker has cooked plenty of pies over the last 15 years with oil from the dough cooked right in to it, spilled cheese and sauce fused to it, burnt flour, cornmeal, and semolina all playing a part as well.  Love the smell!  It takes time.
